It is not uncommon to look up when driving through the Oaxacan mountains to find a huge Tepeztate jutting directly out of a mountain face, or upside down on a boulder. Known in Zapotec as Du Cual, a reference to the twisted shape of its leaves, this powerfully aromatic agave delivers bright, green and floral mezcal which belies its
